- 450-500g fruits (choose any fruits according to your liking)
- 2 tbsp sugar
- 2 tbsp lemon juice
- 1 tsp vanilla essence
- 220g all purpose flour
- 1 tsp baking powder
- 20g corn flour
- 115g salted butter
- 170g sugar
- 3 eggs
- 60g plain yogurt
- 1 tbsp grated lemon
- 1 tsp vanilla essence
Instructions
- 1. Mix all the fruits, sugar, lemon juice and vanilla essence together and keep aside.
- 2. Preheat oven at 160 degrees Celsius. Grease and layer the pan (27cm x 22cm) with a baking paper.
- 3. Beat the sugar and butter until light and creamy till about 3 to 4 minutes.
- 4. Add the yogurt and mix again.
- 5. The grated lemon and vanilla essence is added into the batter.
- 6. Add the eggs one at a time and mix well.
- 7. Lastly add in the sieved flour (all purpose flour, baking powder and corn flour).
- 8. Once done, place the batter into the prepared pan and level the batter.
- 9. Arrange all the fruits on top of the batter.
- 10. Bake the cake at 160 degrees Celsius for 40 to 45 minutes. Can also use a cake tester to test if the cake is well baked.
- 11. Remove the baked cake from the oven and sprinkle icing sugar on to the top of the fruits.
