Recipe Ingredient

  • 175g margarine or butter
  • 135g soft brown sugar
  • 1 tsp vanilla essence
  • 100ml fresh milk
  • 50ml orange juice
  • Grated rind of 1 orange
  • 225g self-raising flour
  • 1 tsp baking powder
  • 1/4 tsp bicarbonate of soda
  • Topping:
  • 10g toasted almond nibs

Instructions

  1. Grease sides and line the base of a 16cm square cake pan with greased baking paper. Sift together the self-raising flour, baking powder and bicarbonate of soda; set aside.
  2. Cream margarine or butter, orange rind, sugar and vanilla essence until light and fluffy. Combine milk and orange juice and beat in alternately with sifted dry ingredients until well combined.
  3. Turn mixture into the prepared pan and level the surface. Sprinkle the top with almond nibs.
  4. Bake in a preheated oven at 175°C for 50 minutes until the surface is golden brown and cake is cooked through when tested with a skewer.
  5. Cool the cake in the pan for 10-15 minutes before turning out onto a wire rack to cool completely.

    Hi, can substitute self-raising flour to all purpose flour?

      Hi Kavan, self-raising flour and all purpose flour are not interchangeable as salt and baking powder have been added into self-raising flour, mixed evenly.

      If using all purpose flour, as a general rule, add in ½ teaspoon to 1 teaspoon of baking powder per 1 cup of all-purpose flour. Happy Cooking!

      Hi Mirah, this recipe calls for milk instead of water. If you are thinking of substituting water with milk instead, you may do so, but you may need to increase the butter by around 15 – 30g more to make up for the change in consistency. Happy improvising and baking!

    Hi Amy, do we need to add the baking powder despite using self raising flour. Is this cake with brown sugar sweet? Is the sweetness just nice or less sweet?

      Hi Rema, adding baking powder to the self-raising will give it more rise, although it is true that self-raising flour already has some baking powder in it. This sugar uses 135g brown sugar – you may choose to lower the grammage to 100g if you prefer it less sweet as each person’s sugar liking is different. Upon trying the recipe the first time, you can make minor adjustments to it to tailor it. Happy Baking!
