- 140g butter
- 100g black treacle
- 110g golden syrup
- 50g castor sugar
- 150ml evaporated milk
- 2 eggs, lightly beaten
- 75g sultanas
- Combine and sift:
- 225g plain flour
- 1 tsp mixed spice
- 1 tsp bicarbonate of soda
Instructions
- Line and grease a loaf tin. Preheat oven to 150 ºC.
- Combine butter, treacle, golden syrup and sugar in a heavy saucepan. Heat gently to dissolve all the ingredients. Add the milk, stir to blend, then leave to cool completely.
- Stir in eggs and blend until mixture turns smooth. Fold in sifted dry ingredients and mix well. Stir in sultanas.
- Turn mixture out into loaf tin and bake in preheated oven for one-and-a-half to two hours or until cake is cooked when tested with a skewer. Cool cake on a wire rack before turning it out.
