- 130ml corn oil
- 190g castor sugar
- 2 large eggs, lightly beaten
- Sifted
- 210g plain flour
- 1 1/4 tsp baking powder
- 1/2 tsp bicarbonate of soda
- 1/2 tsp salt
- 200g grated carrot
- 1 green apple, grated
Instructions
- Position rack in centre of the oven and preheat to 190°C. Grease a 12-cup standard-sized muffin tray.
- Combine sugar, corn oil and eggs in a large mixing bowl. Stir in sifted flour, baking powder and bicarbonate of soda. Mix well to combine with a wooden spoon. Add in remaining ingredients and stir well to blend.
- Divide batter among prepared muffin cups and bake for 20-30 minutes. Turn muffins out onto wire rack to cool. Serve warm.
