- 350g plain flour
- 2 tsp baking powder
- 125g castor sugar
- 75g pecans, toasted and chopped
- 2 eggs
- 125g melted butter
- 250ml milk
- 1 tsp vanilla essence
- 1 Granny Smith apples, diced
Instructions
- Grease a 12-hole muffin pan. Sift flour and baking powder into a bowl of an electric mixer and stir in sugar and pecan nuts.
- In a small bowl, mix the eggs, butter, milk and essence. Pour mixture into the dry ingredients and mix on medium speed for 10-20 seconds.
- Stir in apples to mix. Fill batter into the muffin pan and bake in preheated oven at 200°C for 25 minutes or until well-risen and lightly golden.
