- 50g butter
- 100g castor sugar
- 2 egg whites
- 45g plain flour
- 55g ground almonds
- 1/2 tsp vanilla essence
- 100g slivered almonds
Instructions
- Preheat oven to 200°C.
- Combine butter and sugar in a mixing bowl then mix together with a metal spoon to blend. Beat with an electric mixer until mixture turns light and fluffy.
- Add in the egg whites and stir well to blend. Add in sifted flour and use a metal spoon to mix in the flour evenly. Next, stir in ground almonds and essence; mix.
- Drop tablespoonfuls of the on to lightly greased baking trays, spacing them well apart. With the back of a spoon spread out the batter into thin transparent circles.
- Sprinkle each circle with some slivered almonds.
- Bake in preheated oven until the outer edges of the cookies have browned slightly. This takes about 3-4 minutes.
- Remove the tray from the oven and with a metal spatula, quickly drop the cookies over a rolling pin so that they become curved. Transfer the tuiles to a rack when firm. Should the cookies harden too fast for you to shape, reheat them briefly for 1-2 minutes.
- Repeat the whole process until all the mixture is used up.
