Recipe Ingredient
- 180g butter
- 170g soft brown sugar
- 4 eggs
- 3 egg yolks
- (Group A) Coffee mixture:
- 1tsp instant coffee granules
- 1/2tsp coffee emulsion
- 1tsp vanilla essence
- 2tbsp water
- (Group B) Sifted dry ingredients:
- 220g superfine flour
- 40g corn flour
- 1tsp baking powder
- 5g cocoa powder
- 1/2tsp bicarbonate of soda
- 75g sultanas
- 40g ground almonds
- 100g milk
- 25g almond flakes
Instructions
- Grease gugelholf tin with butter and add some almond flakes liberally around the mould.
- Cream butter and brown sugar until light and fluffy. Beat in eggs and egg yolks, one at time, beating well after each addition. Add in (Group A) Coffee mixture.
- Fold in (Group B) Sifted dry ingredients and finally add in ground almonds and sultanas to mix. Gradually beat in milk. Mix until well combined.
- Turn mixture into prepared gulgelholf tin. Level the surface with a spatula. Bake in preheated oven at 180°C for 15 minutes then reduce the heat to 170°C and continue to bake for 45 minutes or until browned and cooked through when tested with a wooden skewer.
