Recipe Ingredient
- 3 eggs
- 1/4 cup UHT milk
- 1 tbsp brandy
- (A):
- 325g mixed fruits
- 1/2 cup water
- (B):
- 250g butter
- 150g castor sugar
- 1/2 tsp vanilla essence
- (C) - sifted:
- 175g plain flour
- 2 tsp baking powder
- 1/4 tsp bicarbonate of soda
Instructions
- Boil (A) over gentle heat till mixture is dry. Set aside to cool completely. Beat (B) till pale and light. Add eggs, one at a time, beating well after each addition. Fold in sifted ingredients (C) and stir in milk. Lastly, add brandy.
- Combine batter with the fruit mixture. Stir well to mix. Turn out mixture into a greased and floured cake tin. Cover with a double layer of grease-proof paper. Steam for two hours or until cake is cooked when tested with a skewer.
