- 175g butter
- 150g brown sugar
- 1 tsp vanilla essence
- 3 large eggs
- 75g golden syrup
- 1 tbsp ginger juice
- Sift:
- 300g self-raising flour
- 1 tsp bicarbonate of soda
- 4 tsp ground ginger
- 1 tsp ground cinnamon
- 180ml plain UHT milk
Instructions
- Cream butter with sugar and vanilla essence until pale and fluffy. Gradually beat in eggs one at a time until well combined then add in golden syrup. Add in ginger juice and continue to cream for a while.
- Stir in sifted dry ingredients, alternating it with the milk. Pour batter into a prepared pan and bake in a preheated oven at 170°c for about 50-60 minutes or until it is cooked through when tested with a skewer. Stand cake in the pan for 5 minutes before turning onto a wire rack to cool.
- Preparation of pan: Grease pan well and sprinkle with almond flakes at the bottom.
