- 100g margarine
- 50g butter
- 100g castor sugar
- ½ tsp vanilla essence
- 1 egg yolk
- 2 tbsp orange juice
- Grated rind from one orange
- 100g semolina
- Sift:
- 250g plain flour
- 1 tbsp corn flour
- 1 tbsp rice flour
- 50g crushed almond flakes
Instructions
- Preheat oven at 180°c.
- Cream butter, margarine, sugar and essence until light and pale. Add egg yolk and orange rind and beat. Slowly dribble in orange juice.
- Add semolina and gently fold in the sifted flours. Mix well, then stir in the crushed almond flakes. (should the dough be too soft, chill it in the freezer for 15 to 20 minutes.)
- Roll the dough into walnut-sized balls and place them onto the prepared trays. Dip a fork into some flour and lightly press it on the dough to make an impression. Bake in a preheated oven for 15 to 20 minutes or until golden brown. Leave the cookies on the trays for a few minutes and then transfer them onto wire racks to cool.
