Recipe Ingredient
- 200g butter
- 160g castor sugar
- 3 eggs
- 1 tsp vanilla essence
- Grated rind of 1 orange
- 180g plain flour
- 1 tsp baking powder
- 1 tbsp milk
- 1 tbsp freshly squeezed orange juice or if preferred 1 tbsp Cointreau (optional)
- Combined:
- 100g raisins, chopped
- 5 red cherries, chopped
- 1 tbsp self-raising flour
Instructions
- Grease sides and line the base of a 21x11x7cm loaf pan with greased greaseproof paper.
- Combine raisins, cherries and self-raining flour in a plastic bag. Shake well until fruits are well-coated with flour.
- Cream butter and sugar until light and creamy. Add in essence. Beat in eggs one at a time and stir in the orange rind.
- Combine milk and orange juice and gradually add to the creamed mixture. Fold in the sifted flour and baking powder. Add in milk and orange juice mixture. Mix in the raisins and cherries.
- Turn out batter into prepared loaf pan and bake in preheated oven at 170°C for 1 hour or until a skewer inserted in the centre of the cake comes out clean. Leave the cake in the tin for 5-10 minutes before turning out onto a wire rack to cool.
