Recipe Ingredient
- (A):
- 125g butter
- 110g sugar
- 2 eggs, lightly beaten
- (B) Sifted:
- 250g flour
- 1 tsp baking powder
- 1/2 tsp bicarbonate of soda
- 1/4 tsp salt
- (C):
- 1 tbsp lemon juice
- 2 tbsp orange juice
- 4 tbsp UHT milk
- (D):
- 1 tsp grated lemon rind
- 1 tsp grated orange rind
- Filling:
- 1 tin Monarch lemon pie filling (sold in supermarkets)
Instructions
- Cream (A) until pale. Gradually beat in the eggs. Fold in dry ingredients (B). Mix in (C) and add (D). Do not over-mix the mixture.
- Spoon 2 tbsp mixture into greased muffin pans to slightly half full. Add 1 tsp lemon pie filling then top up with more mixture to three-quarters full.
- Bake in a hot oven at 200ºC for 20 to 25 minutes or until cooked through.
