- 100g margarine
- 100g butter
- 125g icing sugar
- 1 tsp vanilla essence
- 3 tbsp orange juice
- 1 tbsp lemon juice
- 1 tbsp grated orange rind
- 1/2 tsp baking powder
- 100g almonds, halved
- Sift:
- 300g plain flour
- 50g custard powder
Instructions
- Grease baking trays with melted butter. Preheat oven at 180 ºC.
- Cream margarine, butter, sugar and vanilla essence until creamy. Add orange and lemon juice and orange rind. Beat for one more minute.
- Stir in sifted dry ingredients to combine. Fill mixture into a piping bag fitted with a star nozzle and pipe out cookies on prepared trays. Top up with a piece of almond.
- Bake in preheated oven for 15 minutes or until golden. Leave on the tray for five to 10 minutes before transferring the cookies on to a wire rack to cool.
