- 225g self-raising flour
- 20g milk powder
- 1/2 tsp baking powder
- 1/4 tsp bicarbonate of soda
- 175g butter
- 160g castor sugar
- 3 eggs, lightly beaten
- 1/2 tsp vanilla essence
- 1/2 tsp orange essence
- 2½ tbsp orange juice
- 1 tsp lemon juice
Instructions
- Sift flour, milk powder, baking powder and bicarbonate of soda together.
- Line two pastry tins with paper cups. Cream butter and sugar until light and fluffy. Beat in the eggs one at a time until well combined.
- Beat in essences, then fold in the sifted dry ingredients alternately with the orange and lemon juice.
- Fill paper cups with the mixture. Bake in preheated oven at 170°C–180°C for 15–20 minutes or until well-risen and golden in colour. Serve the cupcakes warm.
