- 275g flour
- 1 tsp baking powder
- 175g butter
- 175g castor sugar
- 3 eggs
- Combine:
- 100ml milk
- 125ml orange juice
- 1 tsp lemon juice
- 1 tsp vanilla essence
- 3 tsp grated orange rind
Instructions
- Sift flour and baking powder together. Preheat oven to 180 ºC. Grease the sides of a 23cm round or square cake tin and line base with non-stick parchment.
- Beat butter and sugar until creamy, light and fluffy. Add eggs one at a time, beating well after each addition. Add in orange rind.
- Fold in sifted dry ingredients, alternating with the combined liquid mixture. Pour mixture into prepared tin and bake in preheated oven for one hour or until a skewer inserted in the centre of the cake comes out dry.
- Cool cake in tin for five minutes before turning it out onto a wire rack.
