- 120g butter
- 100g soft brown sugar
- 40g castor sugar
- 1 tsp vanilla essence
- 1 egg
- 75g chocolate chips
- 50g macadamia nuts, chopped
- Sifted (combine):
- 180g plain flour
- 30g cocoa powder
- l/2 tsp baking powder
- 1 tsp bicarbonate of soda
Instructions
- Line baking trays with non-stick parchment. Preheat oven to 170 ºC. Cream butter, both types of sugar and essence until creamy. Beat in egg until mixture is light and fluffy.
- Stir in sifted ingredients with a metal spoon. Add in chocolate chips and stir in the chopped nuts. Mix well to combine.
- Drop mixture by the teaspoon onto prepared trays. Bake in preheated oven for 15 to 20 minutes or until cookies are cooked. Leave on the trays for a minute before transferring them onto a wire rack to cool.
