- 250g butter
- 240g castor sugar
- 1/2 tsp vanilla essence
- 1/2 tbsp grated fresh mature ginger
- 1/2 tsp ground nutmeg
- 1 tbsp ground cinnamon
- 1 tbsp ground ginger
- 4 eggs
- 280g plain flour
- 1 tsp baking powder
- 1/2 tsp bicarbonate of soda
- 65g crystallised Glazed ginger, coarsely chopped
- 5 tbsp milk
Instructions
- Preheat oven at 170°C. Grease a 21cm square cake pan and line the base with greased greaseproof paper.
- Beat butter and sugar until creamy. Add in vanilla essence and grated ginger and continue to beat until light and fluffy.
- Add eggs, one at a time, beating well after each addition.
- Sift flour, baking powder and bicarbonate of soda into creamed mixture. Add ground nutmeg, cinnamon powder, ginger powder and chopped glazed ginger
- Using a metal spatula, spread mixture into prepared cake pan. Bake in pre-heated oven for 60-70 minutes or until cooked through.
