Recipe Ingredient

  • 250g butter
  • 240g castor sugar
  • 1/2 tsp vanilla essence
  • 1/2 tbsp grated fresh mature ginger
  • 1/2 tsp ground nutmeg
  • 1 tbsp ground cinnamon
  • 1 tbsp ground ginger
  • 4 eggs
  • 280g plain flour
  • 1 tsp baking powder
  • 1/2 tsp bicarbonate of soda
  • 65g crystallised Glazed ginger, coarsely chopped
  • 5 tbsp milk

Instructions

  1. Preheat oven at 170°C. Grease a 21cm square cake pan and line the base with greased greaseproof paper.
  2. Beat butter and sugar until creamy. Add in vanilla essence and grated ginger and continue to beat until light and fluffy.
  3. Add eggs, one at a time, beating well after each addition.
  4. Sift flour, baking powder and bicarbonate of soda into creamed mixture. Add ground nutmeg, cinnamon powder, ginger powder and chopped glazed ginger
  5. Using a metal spatula, spread mixture into prepared cake pan. Bake in pre-heated oven for 60-70 minutes or until cooked through.
