Recipe Ingredient
- 2 1/2 packets of Big Sister Fruit Mix
- 1 cup chopped raw peanuts
- 1 cup chopped cashew nuts
- 60g Big Sister Glaced Cherries
- 120g chopped almonds
- 3/4 cup brandy, rum, whisky, sherry or orange juice
- 230g plain flour
- 60g self-raising flour
- Pinch salt
- 2 tsp mixed spice
- 230g butter
- 230g light brown sugar
- 1 tbsp marmalade or dark jelly jam
- 2 tsp vanilla essence
- 4 eggs
Instructions
- Place the fruit and nuts in a bowl & sprinkle spirit or orange.
- Cover & preferably stand overnight.
- Sift together the flour, salt & spices.
- Cream together the butter & sugar until light & fluffy. Add the jam & essence & beat again.
- Beat in one egg at a time.
- Alternately,add the flour & fruit mix until both are used.
- Place mixture in a prepared 20cm round tin & bake 3-3 1/2 hours at 325-350F.
