- 170g all purpose flour
- 30g corn flour
- 25g rice flour
- 1/8 tsp bicarbonate of soda
- 1/4 tsp baking powder (sift the above ingredients together)
- 150g butter
- 65g castor sugar
- 1 egg, separated
- 1/8 tsp salt
- 1/8 tsp coffee emulco
- 20g chocolate chips
- 20g walnuts, finely chopped
- 20g white chocolate chips
Instructions
- Lightly grease cookie trays with corn oil. Preheat oven at 170° C. Cream butter and sugar until light and creamy.
- Beat in salt, egg yolk and coffee emulco. Fold in sifted ingredients and add chocolate chips and walnuts.
- Roll out dough in between two plastic sheets and cut out with a bell-shaped cookie cutter. Lightly brush cookies with egg white and press white chocolate chips to decorate the cookies.
- Bake for 16 to 18 minutes or until lightly browned.
