- 50ml rum (liqueur)
- 250g self-raising flour
- 165g golden raisins
- 30g cocoa powder
- A pinch of salt
- 100g sugar
- 175g chocolate chips
- 55g butter melted
- 180ml milk
- 1 egg
Instructions
- Grease a muffin pan. Put raisins in a small bowl. Add rum to soak the raisins for more than an hour.
- Sift flour, cocoa powder and salt in a mixing bowl. Add sugar, raisin, rum mixture, melted butter and egg. Mix well. Add chocolate chips.
- Spoon mixture into a muffin pan (three-quarters full) and bake in a preheated oven at 200 ºC for about 20 minutes or until a skewer inserted in the centre comes out clean.
