Recipe Ingredient

  • 50ml rum (liqueur)
  • 250g self-raising flour
  • 165g golden raisins
  • 30g cocoa powder
  • A pinch of salt
  • 100g sugar
  • 175g chocolate chips
  • 55g butter melted
  • 180ml milk
  • 1 egg

Instructions

  1. Grease a muffin pan. Put raisins in a small bowl. Add rum to soak the raisins for more than an hour.
  2. Sift flour, cocoa powder and salt in a mixing bowl. Add sugar, raisin, rum mixture, melted butter and egg. Mix well. Add chocolate chips.
  3. Spoon mixture into a muffin pan (three-quarters full) and bake in a preheated oven at 200 ºC for about 20 minutes or until a skewer inserted in the centre comes out clean.
