- 175g butter
- 100g castor sugar
- 350g self-raising flour, sifted
- 75g chocolate chips
- 75g pistachio nuts, coarsely chopped
- 1 egg, lightly beaten
Instructions
- Put flour into a mixing bowl. Rub in butter until mixture resembles fine breadcrumbs. Stir in sugar and chocolate chips. Add egg and mix well. Add pistachio nuts and mix.
- Knead lightly until smooth. Roll out dough on a lightly-floured tabletop. Cut out with cookie cutter and arrange cookies on lightly greased baking trays. Bake in a preheated oven at 180 ºC for 10 to 15 minutes or until golden brown. Cool on wire racks.
