Recipe Ingredient

  • 175g butter
  • 100g castor sugar
  • 350g self-raising flour, sifted
  • 75g chocolate chips
  • 75g pistachio nuts, coarsely chopped
  • 1 egg, lightly beaten

Instructions

  1. Put flour into a mixing bowl. Rub in butter until mixture resembles fine breadcrumbs. Stir in sugar and chocolate chips. Add egg and mix well. Add pistachio nuts and mix.
  2. Knead lightly until smooth. Roll out dough on a lightly-floured tabletop. Cut out with cookie cutter and arrange cookies on lightly greased baking trays. Bake in a preheated oven at 180 ºC for 10 to 15 minutes or until golden brown. Cool on wire racks.
