- 185g butter
- 220g icing sugar
- 1/2 tsp vanilla essence
- 2 large eggs
- Sift together :
- 395g flour
- 3/4 tsp baking powder
- 3/4 tsp bicarbonate of soda
- 110g finely chopped walnuts
Instructions
- Preheat oven at 180°C. Line cookie trays with non-stick parchment or greased greaseproof paper. Put butter in the bowl of electric mixer together with icing sugar and beat until light and creamy.
- Add vanilla essence and mix well. Beat in eggs, one at a time. Stir in sifted dry ingredients until well combined. Mix in chopped walnuts.
- Take a marble-sized ball of dough (approximately 10-12g). Shape into a round disc and make a dent in the centre. Place on prepared trays and bake for 20 minutes or until golden and crisp. Transfer biscuits onto a wire rack to cool.
