Recipe Ingredient

  • 1 cup applesauce
  • 1 tbsp hot water
  • 1/2 tsp bicarbonate of soda
  • 250g butter
  • 125g castor sugar
  • 3 eggs
  • Sift:
  • 300g plain flour
  • 2 tsp cocoa powder
  • A pinch of ground cloves
  • 1/4 tsp cinnamon powder
  • 1/4 tsp salt
  • 50g raisins
  • 50g chopped walnuts
  • For applesauce:
  • 200g apples, peel, cube and soak in salty water
  • 2 tbsp castor sugar

Instructions

  1. To prepare the applesauce, cook apples and sugar for 7 to 8 minutes until soft. Put the cooked apples into a blender and blend to a puree.
  2. Grease and flour a ring-shaped tin. Preheat oven to 170°C. Cream butter and sugar. Add eggs one at a time, beating in between additions.
  3. Dissolve bicarbonate of soda in hot water, then add to applesauce and mix.
  4. Fold in the sifted ingredients, add applesauce and alternate the process; blend. Stir in walnuts and raisins.
  5. Pour batter into prepared tin and bake in preheated oven for 55 minutes or until cooked when tested with a skewer.
  6. Cool cake on rack for 10 minutes then invert tin and turn cake out onto rack to cool completely. Dust cake with sugar before serving.
