- 1 cup applesauce
- 1 tbsp hot water
- 1/2 tsp bicarbonate of soda
- 250g butter
- 125g castor sugar
- 3 eggs
- Sift:
- 300g plain flour
- 2 tsp cocoa powder
- A pinch of ground cloves
- 1/4 tsp cinnamon powder
- 1/4 tsp salt
- 50g raisins
- 50g chopped walnuts
- For applesauce:
- 200g apples, peel, cube and soak in salty water
- 2 tbsp castor sugar
Instructions
- To prepare the applesauce, cook apples and sugar for 7 to 8 minutes until soft. Put the cooked apples into a blender and blend to a puree.
- Grease and flour a ring-shaped tin. Preheat oven to 170°C. Cream butter and sugar. Add eggs one at a time, beating in between additions.
- Dissolve bicarbonate of soda in hot water, then add to applesauce and mix.
- Fold in the sifted ingredients, add applesauce and alternate the process; blend. Stir in walnuts and raisins.
- Pour batter into prepared tin and bake in preheated oven for 55 minutes or until cooked when tested with a skewer.
- Cool cake on rack for 10 minutes then invert tin and turn cake out onto rack to cool completely. Dust cake with sugar before serving.
