- 130g butter
- 180g soft brown sugar
- 80g honey
- 175g self-raising flour, sifted
- 1 tsp baking powder
- 3/4 tsp bicarbonate of soda
- 1½ tsp cinnamon powder
- 100g wholemeal flour
- 4 eggs
- 100g chopped walnuts
- 50g sultanas
Instructions
- Grease and lightly flour a Kugelhopf pan.
- Cream butter, sugar and honey until creamy and light. Beat in eggs, one at a time, beating well after each addition.
- Sift in flour, baking powder, bicarbonate of soda, cinnamon powder and wholemeal flour. Return the husks to the mixture to mix.
- Stir in nuts, sultanas and apple. Combine well with a metal spoon.
- Spread mixture into prepared Kugelhopf pan and bake in preheated oven at 180°C for 40-50 minutes or until a skewer inserted into the cake comes out clean. Allow the cake to stand in the pan for 5 minutes before turning out to cool on a wire rack.
