- 500g minced lean beef
- 1/2 tsp salt
- 2 tbsp chopped fresh parsley
- 1/2 tbsp ground black pepper
- 1/2 tsp pepper
- 25g butter
- 2 Bombay onions, sliced in rings
- 1 tbsp soft brown sugar
- 4 damper rolls
- Accompaniments:
- A few leaves Romaine lettuce
- 1/2 cup mayonnaise
- 1 tbsp Dijon mustard
- Chopped parsley
- Tomato slices
Instructions
- Put minced beef, salt, parsley and both peppers in a mixing bowl. Combine and mix well until meat is well blended. Divide mixture into four equal portions. Shape into round patties and place on a plastic sheet trimmed to the size of round patties. Refrigerate for 30 to 40 minutes.
- Heat butter in a non-stick pan. Add onion and cook over a medium-low heat until it turns golden brown. Add sugar and cook, keep stirring to prevent burning till onions are well browned. Remove to a plate, cover to keep warm.
- Reheat pan and cook the meat patties for five to six minutes each side or until browned and cooked through.
- Cut the damper rolls into halves and toast. Place roll base on a plate and add a piece of lettuce. Place a cooked burger patty on it, add some cooked onions and a dash of mayonnaise, some dijon mustard, chopped parsley and a slice of tomato. Place the other half of the damper roll on top. Serve immediately.
