- (A):
- 250g bread f1our (high-protein flour)
- 50g plain f1our
- 1/4 tsp salt
- 25g sugar
- 1/2 tbsp instant yeast
- 1 egg
- 1/8 tsp bread improver
- 1 tsp milk powder
- 24g condensed milk
- (B):
- 125ml water
- (C):
- 40g butter
- Fruit filling (mix together and set aside)
- 100g sultanas
- 25g chopped walnuts
- Grated rind of 1 orange
- 1/2 tsp cinnamon powder
- 1 tbsp melted butter
- 1 egg (beaten with 2 tbsp water, to be used as glaze)
Instructions
- Combine the flours and salt in a mixing bowl. Stir in the sugar, yeast and the rest of the ingredients in (a). Add in (b) and mix on low speed for 2 minutes then turn to medium speed for 2 minutes until a dough is formed.
- Add in the butter (c). Mix on low speed for 2 minutes and on medium speed for 6-8 minutes. Transfer dough to a lightly greased bowl, cover and leave aside for 15 minutes.
- Take out dough onto a floured surface, rollout flat and cover with a piece of glad wrap to prove for 20 minutes. Then flatten dough into a rectangle. Brush lightly with melted butter. Sprinkle on the filling. Roll up tightly, tucking in the ends slightly as you roll. Place into a greased and floured loaf tin, cover and leave to rise for 35 minutes until almost double in volume.
- Preheat oven to 200 ºC. Brushthe loaf with glaze. Bake for 10 minutes. Lower temperature to 170 ºC and bake for 20 minutes until golden. Cool on rack before removing.
