Recipe Ingredient
- 500g bread flour (Diamond brand, if available)
- 5g bread improver
- 15g yeast
- 2 teaspoons salt
- 320ml water
- 30g shallots, peeled, sliced and deep fried
- 10g garlic, peeled and chopped
- 30 pieces ketupat casings
Instructions
- Combine the dried ingredients in a large mixing bowl. Make a well in the centre and add the water. Mix well to form a pliable dough.
- Turn the dough out onto a floured surface and knead until smooth, about 5 minutes. Mix in the garlic and fried onions. Knead for another few minutes.
- Shape dough into a ball and place in the mixing bowl. Cover with a clean kitchen towel. Allow to proof until doubled in size, about 1 hour.
- Punch down the dough and knead lightly. Divide dough into 10g portions and shape into balls. Stuff into the ketupat casings and cover with a kitchen towel. Set aside for 10 minutes before baking in a preheated oven at 190°C for 12 minutes.
