- 50g butter
- 60g canola/sunflower oil
- 105g soft brown sugar
- 2 eggs
- 1/2 tsp vanilla essence
- 150g banana, mashed
- 20g ground almonds
- 200g superfine flour
- 3/4 tsp baking powder
- 1/4 tsp bicarbonate of soda
- 30g sultanas
- 2 tbsp milk
- Garnishing
- Some almond flakes
Instructions
- Grease 5 mini loaf pans and preheat oven to 170°C.
- Beat butter and canola/sunflower oil, sugar and essence until creamy. Add eggs, one at a time beating well after each addition.
- Mix in mashed bananas, ground almonds and sultanas.
- Sift in flour, baking powder and bicarbonate of soda to combine then add in milk but do not overmix.
- Spoon mixture into mini loaf pans until three-quarters full. Bake for 20-25 minutes or until cooked through when tested with a skewer.
