- 300g bread flour or high protein flour
- 2¼ tsp instant yeast
- 1½ tsp sugar
- 1½ tsp salt
- 180ml cold water
- 42g shortening
- Sesame seeds
Instructions
- Sift flour into a large mixing bowl. Stir in sugar, salt and yeast to mix.
- Make a well in the centre and pour in the water.
- Add in shortening and mix into a soft dough.
- Remove dough out onto a floured surface and knead until smooth and elastic.
- Return the dough into the bowl and cover with a piece of cling film wrap and leave aside to prove for 40–45 minutes.
- Punch down the dough and form into a big ball. Let it rest for 15 minutes.
- Put dough on a lightly-floured surface and roll out into a rectangle of about 50x12cm piece. Using a pastry or pizza wheel cut the dough lengthwise into strips.
- Wet the palm of your hands lightly with water and roll the strips, stretching it slightly.
- Sprinkle some sesame seeds onto a table-top and place the strips of dough over them. Next, roll the dough in the seeds.
- Lift the strips of dough onto the baking tray that´s lined with parchment paper.
- Brush the dough strips lightly with water and sprinkle with a dash of salt. Allow to rest for 10–12 minutes.
- Bake in preheated oven at 220°C for 15 minutes.
- Remove the baking tray from the oven and set aside to cool. Rebake again in a preheated oven at 150°C for 10–15 minutes or until lightly browned and very crisp.
- The ends will curl up slightly. Transfer the breadsticks from the baking tray onto wire racks to cool.
