Recipe Ingredient
- Syrup:
- 600ml water
- 400g castor sugar
- 4-5 pandan leaves
- Mix the following ingredients well then sieve to remove impurities:
- 175g lok tau fun (green bean flour)
- 1 tbsp cornflour
- 400ml water
- 750g syrup
- 1 litre water
- A few drops of cochineal for pink colour
- 1 tbsp cocoa mixed with 2 tbsp water to make a smooth paste for cocoa colour
Instructions
- Bring water, sugar and pandan leaves to a boil to form syrup. Leave to cool.
- Add one litre of water to the syrup and bring to a boil. Mix in the sieved green bean flour mixture and cook over slow fire, stirring all the while to prevent lumps forming till mixture thickens and boils.
- Divide mixture into three portions: keep one mixture white, add cochineal to the other and cocoa paste to the third portion. Slowly bring them to boil.
- Pour chocolate mixture into a rabbit mould and add half the white portion. Use a satay stick to stir the mixture to form a marbled pattern. Leave to set and cool. Chill well in the refrigerator before inverting out to serve. Do the same for the pink-coloured bunny.
