Recipe Ingredient

  • Syrup:
  • 600ml water
  • 400g castor sugar
  • 4-5 pandan leaves
  • Mix the following ingredients well then sieve to remove impurities:
  • 175g lok tau fun (green bean flour)
  • 1 tbsp cornflour
  • 400ml water
  • 750g syrup
  • 1 litre water
  • A few drops of cochineal for pink colour
  • 1 tbsp cocoa mixed with 2 tbsp water to make a smooth paste for cocoa colour

Instructions

  1. Bring water, sugar and pandan leaves to a boil to form syrup. Leave to cool.
  2. Add one litre of water to the syrup and bring to a boil. Mix in the sieved green bean flour mixture and cook over slow fire, stirring all the while to prevent lumps forming till mixture thickens and boils.
  3. Divide mixture into three portions: keep one mixture white, add cochineal to the other and cocoa paste to the third portion. Slowly bring them to boil.
  4. Pour chocolate mixture into a rabbit mould and add half the white portion. Use a satay stick to stir the mixture to form a marbled pattern. Leave to set and cool. Chill well in the refrigerator before inverting out to serve. Do the same for the pink-coloured bunny.
