Recipe Ingredient
- 500g beef tenderloin, sliced thinly
- Spice ingredients (blend into a paste):
- 2 tbsp chilli paste
- 2cm ginger, grated
- 5 shallots
- 3 cloves garlic
- 30g raisins, blended
- 4 tbsp oil
- 3cm cinnamon stick
- 2 cardamoms, split and use seeds only
- 2 cloves
- 1 star anise
- Seasoning:
- 2 tbsp dark soy sauce
- 1 tbsp sugar
- 1/2 tsp pepper
- 1 tsp beef stock granules
- 1cup water
- 1 onion, cut into rings
- Coriander leaves
Instructions
- Marinate the beef in a tablespoon of the spice ingredients for half-an-hour.
- Heat wok with oil and fry cinnamon stick, cardamoms, cloves and star anise until fragrant. Add remaining spice paste and fry until oil separates.
- Add in marinated beef and fry until well combined. Put in seasoning and water. Bring to a simmering boil and cook until meat is tender and gravy is thick. Should the gravy be thick and meat is still not tender, add 125ml water and continue to cook until meat becomes tender.
- Add onion rings and coriander leaves and mix. Dish out. Serve immediately.
