Recipe Ingredient
- 350g fillet or tender cut of beef, sliced
- thickly across the grain
- 3 slices ginger
- 2 stalks spring onion, cut into 3cm lengths
- 1/2 an onion, sliced
- 5g black peppercorns, coarsely crushed
- 2-3 tbsp oil
- Seasoning ingredients
- 1/2 tsp pepper
- 1/2 tsp Worcestershire sauce
- 1/2 tsp Maggi seasoning
- 2 tbsp water
- 1 tsp corn flour
- Sauce ingredients
- 1 tsp light soy sauce
- 2 tbsp Premium oyster sauce
- 1/2 tsp thick soy sauce
- 1/2 tsp sugar
- 1/2 tsp pepper
- 100ml fresh chicken stock or water
- 1 tsp corn flour
Instructions
- Marinate beef in seasoning ingredients for 15 minutes. Just before cooking, mix in 1 tablespoon of oil.
- Heat wok with oil until hot.
- Stir-fry the beef until it changes colour; use a pair of chopsticks to separate the meat slices. Drain and set aside.
- Reheat wok with the remaining oil and stir-fry ginger for a few seconds, then add spring onions, onion and coarsely crushed black pepper. Stir-fry for a while.
- Add the sauce ingredients and return the beef to the wok and toss to mix well. When it starts to boil, dish out and serve immediately.
