Recipe Ingredient

  • 350g fillet or tender cut of beef, sliced
  • thickly across the grain
  • 3 slices ginger
  • 2 stalks spring onion, cut into 3cm lengths
  • 1/2 an onion, sliced
  • 5g black peppercorns, coarsely crushed
  • 2-3 tbsp oil
  • Seasoning ingredients
  • 1/2 tsp pepper
  • 1/2 tsp Worcestershire sauce
  • 1/2 tsp Maggi seasoning
  • 2 tbsp water
  • 1 tsp corn flour
  • Sauce ingredients
  • 1 tsp light soy sauce
  • 2 tbsp Premium oyster sauce
  • 1/2 tsp thick soy sauce
  • 1/2 tsp sugar
  • 1/2 tsp pepper
  • 100ml fresh chicken stock or water
  • 1 tsp corn flour

Instructions

  1. Marinate beef in seasoning ingredients for 15 minutes. Just before cooking, mix in 1 tablespoon of oil.
  2. Heat wok with oil until hot.
  3. Stir-fry the beef until it changes colour; use a pair of chopsticks to separate the meat slices. Drain and set aside.
  4. Reheat wok with the remaining oil and stir-fry ginger for a few seconds, then add spring onions, onion and coarsely crushed black pepper. Stir-fry for a while.
  5. Add the sauce ingredients and return the beef to the wok and toss to mix well. When it starts to boil, dish out and serve immediately.
