Recipe Ingredient

  • 300g glutinous rice, washed and soaked overnight
  • 100ml-200ml water
  • 3 tbsp thick coconut milk or pati santan
  • ½ tsp salt
  • 1 tsp sugar
  • 2 screw pine leaves, shredded and knotted
  • 3 ripe mangoes, skinned and sliced
  • ½ a grated coconut, squeezed out coconut milk and add a pinch of salt

Instructions

  1. Rinse the rice, then drain and put in a shallow pan. Add water, coconut milk, salt and sugar.
  2. Stir well to mix evenly. Put the knotted screw pine leaves over and steam over rapid boiling water for 20-30 minutes. When rice looks translucent, fluff up.
  3. Combine coconut milk and salt in a small bowl and heat over low fire until it comes to a boil.
  4. Remove and leave aside to cool.
  5. Place the rice on a serving plate and arrange sliced mangoes by the side and drizzle with coconut milk.
