Recipe Ingredient

  • 4 Lipton teabags
  • 300ml water
  • 100g castor sugar
  • 10g agar-agar strips, cut into 3-4cm lengths, soaked for 30-40 minutes then drained
  • 380ml UHT fresh milk
  • 50g castor sugar
  • Fruits:
  • 1 slice red watermelon, cubed
  • 1 slice honeydew, cubed
  • 1 ripe mango, cubed
  • 1 tin longans

Instructions

  1. Put soaked agar-agar and water into a saucepan. Bring to a boil over a gentle heat to dissolve the agar-agar, then add milk and sugar. Stir well to dissolve the sugar. Pour the agar-agar into a square container and leave aside to set and cool. Chill in the refrigerator and cut into cubes.
  2. Steep teabags in water together with the sugar for six to seven minutes. Bring to a simmering boil until liquid turns syrupy. Remove teabags and set the syrup aside to cool.
  3. Chill cubed fruits and longans in the refrigerator. Combine fruits, agar-agar, tea and longan syrup in a punch bowl and serve. This meal is good particularly after a meal of spicy food.
