Recipe Ingredient
- 200g yam (peeled and sliced)
- 70g tapioca flour
- 50ml water
- 1 tsp sugar
- pinch of salt
- Other ingredients:
- 40g dried prawns, soaked and diced
- 2 pieces of dried chinese mushrooms, soaked and sliced
- 2 small pieces of black fungus, soaked and sliced
- 2 pieces of water chestnuts, cubed
- 3 cloves of garlic, chopped
- 10 shallots, sliced and fried
- Garnish, corriander and big red chilli
- Oil
- Seasoning:
- Light soy sauce
- Dark soy sauce
- Sugar to taste
- Pepper and Salt to taste
Instructions
- Slice and steam the yam pieces for 20-30 mins until soft.
- Mash the yam and add tapioca flour and rest of the ingredients. Knead into a dough. Roll into small balls and press the middle so that they look like abacus seeds.
- Boil some water and cook the yam balls until they float in the water. Sieve and soak them in cold water to stop the cooking. Coat them with oil to prevent them from sticking together. Set aside.
- Heat 2 tbsp of oil in wok. Saute garlic and add the dried prawns, dried mushrooms, black fungus till fragrant.
- Add minced meat and stir fry until cooked.
- Add seasoning and add in the yam balls and stir. Cook till dry.
- Garnish.
- Note : When kneading the dough, add the water gradually as you knead until the dough stays as one and doesn´t stick to your hand. Adjust the amount of water and flour.
