- 300g tapioca, skinned
- 150g plain flour
- 1/2 tbsp baking powder
- 1/2 tsp salt
- 2 eggs
- 175ml evaporated milk
- 50g melted butter
- 125g icing sugar, sifted
Instructions
- Parboil tapioca until just cooked. Grate coarsely.
- Combine grated tapioca, salt, sugar, eggs, baking powder, milk and melted butter in a mixing bowl. Stir well to blend. Sift in flour and stir well to blend.
- Pour batter onto a slightly greased pan or use a non-stick pan. Cover and cook over medium low heat for two to three minutes.
- When cooked, remove with a palette knife. Serve immediately.
