Recipe Ingredient
- Dressings:
- 1 tsp wholegrain mustard or any sweet mustard
- 1 Tbsp cider vinegar (or lemon juice)
- 2 Tbsp light vegetable oil
- 1 tsp sugar
- ½ tsp salt
- Pinch of freshly-ground black pepper
- 1 ½ cups fresh sweetcorn kernels
- ½ cup finely diced onion
- ½ cup finely diced red capsicum
- ½ cup finely diced celery
- 2 tbsp coarsely chopped herbs (fresh coriander, chives, parsley or dill)
Instructions
- Combine dressing ingredients in a small bowl and whisk until emulsified.
- Alternatively, shake in a clean jam jar.
- Pour over the salad ingredients, toss together and serve immediately.
