Recipe Ingredient

  • Dressings:
  • 1 tsp wholegrain mustard or any sweet mustard
  • 1 Tbsp cider vinegar (or lemon juice)
  • 2 Tbsp light vegetable oil
  • 1 tsp sugar
  • ½ tsp salt
  • Pinch of freshly-ground black pepper
  • 1 ½ cups fresh sweetcorn kernels
  • ½ cup finely diced onion
  • ½ cup finely diced red capsicum
  • ½ cup finely diced celery
  • 2 tbsp coarsely chopped herbs (fresh coriander, chives, parsley or dill)

Instructions

  1. Combine dressing ingredients in a small bowl and whisk until emulsified.
  2. Alternatively, shake in a clean jam jar.
  3. Pour over the salad ingredients, toss together and serve immediately.
