Recipe Ingredient

  • 500g baby potatoes
  • 1 tbsp olive oil
  • 1 tbsp coarsely ground black pepper
  • 1 tbsp chopped fresh parsley
  • 1/2 tsp thyme
  • 1/2 tsp rosemary
  • 1/2 tsp salt or to taste

Instructions

  1. Clean potatoes and put in a large mixing bowl. Add oil and toss well.
  2. Place a large sheet of aluminum foil on a baking tray. Arrange potatoes on the foil and sprinkle with black pepper. Wrap potatoes with the foil and bake in a preheated oven at 190ºC for 50 to 60 minutes or until potatoes turn tender when pierced with a sharp stick or skewer.
  3. To serve, open the foil and sprinkle with parsley, thyme and rosemary. Sprinkle salt all over. Serve potatoes while still warm.
