Recipe Ingredient
- 600g small baby potatoes, cleaned
- Olive oil cooking spray
- 1 tsp salt
- 1/2 tsp coarse ground black pepper
- 10-12 satay skewers
Instructions
- Soak the satay skewers in cold water for at least an hour before use.
- Put potatoes into a saucepan of cold water then bring to a simmering boil for about 5-6 minutes or until just tender when tested with a skewer. Drain and rinse under running tap water. Cut the potatoes in half and thread them onto the skewers.
- Spray the potatoes with olive oil and sprinkle with salt and black pepper. Arrange the skewers on a barbecue grill. Barbecue for 20-25 minutes or until golden brown and crisp.
- To ensure that the potatoes do not get burnt, turn them over every 10 minutes.
