Recipe Ingredient
- 100g young ginger
- 150ml good quality vinegar
- 200ml water
- 6 tbsp castor sugar
- 1 tsp salt
- A few drops of cochineal food colouring (red food colouring)
Instructions
- Skin ginger and slice through a fine grater until thin slices are obtained.
- Combine vinegar, water, sugar, salt and colouring in a saucepan.
- Bring to a boil. Add the ginger and continue to cook at a low simmering boil until the water is being reduced to about half the amount (about 35 minutes) and the colouring is absorbed by the ginger.
- Take the saucepan away and leave aside to cool completely before serving.
