- 125g butter
- 80g castor sugar
- 1/2 tsp vanilla essence
- 1 egg yolk
- Pinch of salt
- 160g plain flour, sifted
- Coarsely chop:
- 25g pecans
- 25g pistachios
- Topping:
- Enough walnut halves
Instructions
- Line baking trays with non-stick baking paper and preheat oven to 180°c.
- Cream butter, sugar and vanilla essence until light and fluffy. Beat in egg yolk and salt.
- Stir in sifted dry ingredients, mix well and add the chopped nuts.
- Roll teaspoonfuls of the mixture into small balls and place them on the prepared trays, spacing them evenly.
- Flatten each piece of dough slightly and top with half a walnut for decoration. Bake in a preheated oven for 12 - 15 minutes or until golden in colour. Remove on to wire racks to cool completely before storing in airtight containers.
