- 150g okra
- Oil for deep-frying
- 1 tbsp sesame oil
- 1 tbsp chopped garlic
- Seasoning (A)
- ½ tsp turmeric powder
- 2 tsp chilli powder
- ¾ tsp salt
- 2 tbsp plain flour
- 2 tbsp rice flour
- Ingredients (B)
- 6 tbsp lime juice
- 1-1½ tsp sugar
- ½ tsp salt
- ¼ tsp coarsely ground black pepper
- Ingredients (C)
- 1 medium onion, sliced
- 2 tbsp chopped coriander leaves
- 1 red chilli, finely sliced
- 1 green chilli, finely sliced
- 5 bird's eye chillies, finely sliced
Instructions
- Slice okra thinly and shake off the seeds. Mix okra with seasoning (A), then deep-fry in hot oil for 1-2 minutes until crispy. Drain on absorbent kitchen paper.
- Heat sesame oil in a wok and sauté garlic until golden and fragrant. Add ingredients (B) and fry briskly.
- Switch off the fire and add ingredients (C). Return pre-fried okra to the wok and toss well, then dish out and serve immediately.
