Recipe Ingredient
- 500g squid (choose those with thicker flesh)
- 1/2 bowl spicy pre-packed Kentucky flour
- Batter:
- 2½ tbsp self-raising flour
- 2 tbsp rice flour
- 1½ tbsp corn flour
- 1/2 tbsp baking powder
- 1/2 tsp salt
- 1/8 tsp monosodium glutamate
- 1/8 tsp Chinese five spice powder
- 1 tsp meat curry powder
- 150ml or approximately water
Instructions
- Clean squid and cut into slices or rings. Scald in boiling hot water. Drain and leave aside in a colander.
- Combine batter ingredients together in a mixing bowl. Add enough water to make a runny batter.
- Dip squid pieces in batter then toss in Kentucky flour.
- Deep-fry in hot oil until lightly golden and crispy. Serve immediately with Thai chilli sauce.
