Recipe Ingredient

  • 500g squid (choose those with thicker flesh)
  • 1/2 bowl spicy pre-packed Kentucky flour
  • Batter:
  • 2½ tbsp self-raising flour
  • 2 tbsp rice flour
  • 1½ tbsp corn flour
  • 1/2 tbsp baking powder
  • 1/2 tsp salt
  • 1/8 tsp monosodium glutamate
  • 1/8 tsp Chinese five spice powder
  • 1 tsp meat curry powder
  • 150ml or approximately water

Instructions

  1. Clean squid and cut into slices or rings. Scald in boiling hot water. Drain and leave aside in a colander.
  2. Combine batter ingredients together in a mixing bowl. Add enough water to make a runny batter.
  3. Dip squid pieces in batter then toss in Kentucky flour.
  4. Deep-fry in hot oil until lightly golden and crispy. Serve immediately with Thai chilli sauce.
