Recipe Ingredient
- 50g rice flour
- 50g tapioca flour
- 1/2 tsp sugar
- 1/2 tsp salt
- 1 small egg
- 185ml water
Instructions
- Combine both types of flours in a mixing bowl. Add sugar and salt to mix.
- Make a well in the centre of the flour. Break in the egg and stir to mix. Gradually pour in water. Mix into a smooth batter.
- Heat oil in a wok until hot. Put a ladle into the hot oil. Remove the ladle and pour in enough batter to fill up to a quarter full. Place the ladle into the hot oil.
- Once the batter starts to set, shake the ladle to allow the cracker to float up. Leave the cracker in the oil until golden and crispy. Remove with a slotted spoon and drain on crushed paper kitchen towels.
