Recipe Ingredient
- 200ml water
- 25ml fresh milk
- 1 tbsp castor sugar
- 85g butter
- 2 eggs
- Sifted together:
- 150g superfine flour
- 25g high protein flour
- 2 tbsp cocoa powder
- 1/8 tsp salt
Instructions
- Combine water, milk, sugar and butter in a saucepan over low heat. Heat gently to melt the butter and bring the mixture to the boil.
- Add sifted dry ingredients all at once. Cook, stirring vigorously over low heat for 1-2 minutes or until the mixture leaves the sides of the pan and forms a ball. Leave aside to cool slightly.
- Transfer mixture to a mixing bowl and use an electric mixer to beat the mixture. Add in eggs, one at a time, beating well after each addition until the choux pastry is smooth and glossy.
