Recipe Ingredient
- 400g potatoes
- 1 tbsp finely-chopped red chilli
- 1 tbsp finely-chopped green chilli
- 2 slices streaky bacon rashers
- 40g Bombay onion, chopped
- 2 tbsp chopped coriander
- 3-4 tbsp thick coconut milk
- Seasoning
- 1 - 1 ½ tsp salt
- 1/4 tsp pepper
- 1/4 tsp ground black pepper
- A little sugar to taste
Instructions
- Clean the potatoes well. Place them in a saucepan. Add enough water to cover them and boil for 10-15 minutes or until the centre of the potatoes is cooked. Drain the potatoes. Remove skin and mash coarsely.
- Add in red and green chillies, onion, coriander, thick coconut milk and seasoning. Mix well and leave aside.
- Spread out bacon in a non-stick pan and panfry until crispy. Dish out and dice the bacon, then add to the mashed potato. Serve immediately.
