Recipe Ingredient

  • 400g potatoes
  • 1 tbsp finely-chopped red chilli
  • 1 tbsp finely-chopped green chilli
  • 2 slices streaky bacon rashers
  • 40g Bombay onion, chopped
  • 2 tbsp chopped coriander
  • 3-4 tbsp thick coconut milk
  • Seasoning
  • 1 - 1 ½ tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp ground black pepper
  • A little sugar to taste

Instructions

  1. Clean the potatoes well. Place them in a saucepan. Add enough water to cover them and boil for 10-15 minutes or until the centre of the potatoes is cooked. Drain the potatoes. Remove skin and mash coarsely.
  2. Add in red and green chillies, onion, coriander, thick coconut milk and seasoning. Mix well and leave aside.
  3. Spread out bacon in a non-stick pan and panfry until crispy. Dish out and dice the bacon, then add to the mashed potato. Serve immediately.
