Weeks into the start of the Movement Control Order (MCO), if you are like me, your social media must have been flooded with many viral recipes as well. To make it easier for you, we have selected 7 viral recipes that are worth checking out!

Dalgona Coffee

The most famous recipe on the list is Dalgona coffee. A simple yet challenging recipe to kill time while being stuck at home. To make the sweet and creamy upper layer, beat the mixture for at least 400 times, or you could opt for a hand mixer (but you won’t feel the same sense of accomplishment).

Recipe for 1 cup

  • 2 tsp coffee powder (not 3-in-1)
  • 2 tsp sugar
  • 2 tsp hot water
  • Milk and Ice in a tall glass

Combine the first three ingredients in a bowl and stir (with a whisk or hand mixer) until it turns from a dark brown concoction to a beige coloured thick, foamy mixture. Finish by scooping the mixture on to the top of the milk.

Note: If you are using a hand mixer, make sure to use a large bowl so that you don’t get splashed all over with coffee.

Rice Cooker Cake

Did you know that you can make a super fluffy sponge cake with a rice cooker? And the best part is, you can make different flavours by adding your favourite ingredients such as Milo, matcha, cheese etc.

Recipe for 1 cake

  • 3 eggs
  • 90g cake flour
  • 20ml corn oil
  • 60g sugar
  1. Beat the eggs with an electric mixer and slowly add in the sugar. Continue to beat with the high-speed setting for 3 minutes.
  2. Pour in the corn oil and sifted cake flour, and gently fold the batter with a spatula until fully incorporated.
  3. Pour the batter into the rice cooker and cook for 20 minutes. Remember to tap it gently to release any air bubbles.
  4. Once cooked, turn the cake out onto a plate and enjoy!

Homemade Texas Chicken Honey Biscuit

This recipe is famous among the Chinese community but our love with Texas Chicken honey biscuit is universal!

Recipe for 8 biscuits

  • 2.5 cup of plain flour (320g)
  • 4 tps baking powder
  • 2 tbps sugar (more or less based on your own preference)
  • 115g cold butter
  • Honey
  • 140ml fresh milk
  • 2 tbps vinegar

Mix everything (except honey) with your hands to create a breadcrumbs mixture (don’t overmix the ingredients, you will need to keep some texture.). Shape the mixture into dough balls and place them on a baking tray lined with parchment paper. Bake the biscuits at 180°C for 15 minutes. Brush honey on the top of the biscuits and it is ready to be served.

If you are WFH (Working From Home) like me, there are many times where the urge to munch on snacks arises. Instead of going out to buy snacks, make these homemade peanut cookies and enjoy them with a cup of hot coffee.

Recipe for 12 cookies

  • 1 cup of peanut butter (~128 grams)
  • 1/2 cup of white sugar (~60 gram)
  • 1 egg

Preheat the oven at 180°C. Mix all the ingredients in a large bowl and shape the dough into 1-inch dough balls with your hands. Place them on a baking pan lined with baking sheet. Coat a fork with some oil and press the cookie balls to form a criss-cross pattern. Bake for 8-10 minutes at 180°C.

Caramel Custard

If you can’t go out for dessert, just make one at home! This recipe might be a step too much for many but the sweet caramel is worth every effort.

Recipe for 1 caramel custard

Caramel

  • 60g water
  • 30g sugar

Melt the sugar with half of the water on low heat until it dissolves and turns into honey color before adding the remaining water. Do not stir the sugar mixture when it is melting. Pour the caramel in a cup and tilt it to coat the entire base of the cup.

Custard

  • 30g sugar
  • 200ml milk
  • 2 eggs

Boil the milk with sugar and set it aside. In a separate bowl, beat the eggs and pour in the hot milk SLOWLY while whisking it to incorporate. Pour the custard onto the top of the caramel.

Note: Sift the milk before pouring into the cup for a smoother texture.

Caramel Custard

Wrap the cup with aluminum foil and steam it for 10 mins. Once it is cooked and set, run a knife around the rim of the cup and invert onto a dessert plate.

Banana-Cheese Gyoza

Miss your Roti Banana with Cheese during MCO? Well, we might have something for you. This banana-cheese gyoza is a good alternative as it saves the need to make the actual Roti dough.

Recipe for 8 gyozas

  • 2 mashed banana
  • Shredded cheese or processed cheese cut to small pieces
  • Dumpling skin

Wrap the mashed banana and cheese with the dumpling skin, and pan fry till golden.
