THE Sup Gearbox is one of the crowd-pullers at the Sunway Putra Hotel Kuala Lumpur Ramadan buffet.

Cooking the hearty dish with the chunks of meaty bones was quite a laborious process.

Junior sous chef Askandar Myirza Murat said the broth has to be cooked for at least six hours so that the bone marrow would soften and melt into the soup.

“There is also a lot of herbs and spices that go into it but to avoid the soup from becoming dark, it must be put in at the end.

“We blend and saute the spices with ginger and onions and mix it with the soup in the last hour of the cooking process,” said Askandar.

This year, the Jom Iftar spread at the Coffee House goes back to basics with traditional dishes such as Rojak Buah-Buahan, Pasembur with Peanut Sauce, Tauhu Bakar Sumbat with Thai Sauce and Nasi Himpit Kuah Kacang.

“We decided to bring back traditional favourites as many of our guests enjoy breaking fast with these familiar items,” said executive sous chef Samsuddin Ahmad.

Besides Sup Gearbox, some of the main dishes included Soto Ayam, Nasi Beriyani Gam Ayam, Ayam Percik, Rendang Tok and Ikan Siakap Goreng Tiga Rasa.

“We also have the Lamb Kuzi that is a must-have every year. Sometimes on a busy day, we will grill two whole lambs because our customers just love it,” said Samsuddin.

The nasi ulam was another traditional dish featured in the buffet that went well with salted fish and other savoury meats and fishes.

“The rice is cooked with grated coconut and other herbs and there is also some ikan bilis mixed into it,” said Askandar.

He also recommended the Nasi Briyani Gam served with either chicken, mutton or beef.

Customers would also be able to sample food cooked on the spot at stalls with dishes such as grilled stingray, satay, murtabak and fried kuey teow.

For dessert, local specialties rule the table yet again with traditional sweets such as ice kacang, sago gula Melaka, bubur cha cha, bubur pengat pisang and pulut santan durian.

To satisfy the sweet-toothed, there would also an assortment of other desserts such as cakes, pastries and ice-cream.

There are seven different menus that will be rotated throughout the fasting month to offer a variety to customers.

The Jom Iftar buffet is priced at RM88++ per adult and RM44++ per child.
