Hotel coffeehouse brings country’s well-known chef to cook for promotion.
SRI Lanka’s most celebrated chef T.Publis De Silva is in town to showcase dishes from his country in a two-week food promotion at Palace of the Golden Horses.
Publis, who holds a doctorate in culinary arts, is highly regarded in Sri Lanka’s gastronomic circle for his depth of knowledge and is famous for the mouthwatering dishes he creates.
Patrons to the Carousel International Coffeehouse are promised authentic Sri Lankan dishes such as Prawn Tempered (top pic), Fish Curry Malu Mirisata, Chicken Chatti Roast and Mutton Devilled.
Publis said Sri Lankan food was different from the cuisine of neighbouring India.
“We do not use heavy spices in our food, contrary to Indian dishes which use a lot of spices and herbs.
“The taste that comes out from the food is from various ingredients put together,” he said.
There are three different menus for the Sri Lankan food promotion, so it is best to check with the restaurant when you want to make a reservation.
During a recent media preview, we were treated to Menu 1, which consisted of mains of Fish Vinegarthiyal (fish curry), Chicken Chatti Roast, Potato Mustard Curry, Cadju and Pea Curry, Brinjal Dry Curry and Wing Beans Tempered.
The main dishes are accompanied by coconut sambol, a paste of ground coconut mixed with chili peppers, dried Maldive fish and lime juice.
Sri Lankan food is certainly different from the normal South Asian dishes that I am used to, but it was interesting to discover how the food came together.
The dishes are simple and the original flavours of main ingredients used, remain prominent.
If one finds a dish lack punch for one’s personal taste, simply mix it with the coconutsambol or mango chutney.
For appetisers, the Sri Lankan-style Seafood, Herbal Green, Egg and Pineapple Salad is recommended.
Finish off the meal with desserts such as Jaggery Pudding, Panipol Pancake, Milk Toffee, Thalaguli, Curd and Treacle.
The lunch buffet promotion is priced at RM79++ per adult and RM39++ for child or senior citizen.
At dinner, the buffet is priced at RM98++ for adult and RM49 for child or senior citizen.
The Sri Lankan buffet promotion is available from now until Oct 31.
A cultural dance troupe will be performing on selected days during the promotion.
