Intercontinental Kuala Lumpur restaurant pays tribute to the legend in Ramadan.

COMMEMORATE the month of Ramadan at Intercontinental Kuala Lumpur’s Serena Brasserie as they pay tribute to the legendary Tan Sri P. Ramlee.

The buffet, aptly named “One Thousand and One Journey of Laksamana (Admiral) Do, Re, Mi”, will showcase a fine spread of buka puasa favourites comprising both local and international cuisine.

Apart from the decor inspired by classic Malay films, the service team will also be dressed to reflect the 50s era, with P. Ramlee songs and movies playing in the background.

A team of culinary experts, led by chef de cuisine Mohd Zalizam Mohd Rasidi and executive sous chef Abdul Razak Mohd Ali (top pic), has whipped up more than 200 dishes that are featured in a seven-day rotating menu.

One of the must-try dishes is the Kambing Bakar Saddiq Sigaraga, which is roasted whole lamb with garlic and thyme, roasted potatoes and garlic rosemary sauce,

This savoury dish is Abdul Razak’s speciality as the recipe has been tried and tested through the years for the best result.

The meat is cut into thin, tender slices, making it easy to eat with a melt-in-the-mouth texture.

Abdul Razak, who has more than 22 years of experience, also recommends theasam pedas stall, which offers a selection of meat, seafood and vegetables.

“Guests can choose the ingredients they want and it will be mixed in a claypot before being cooked a la minute for freshness.

“We want to give our guests an authentic kampung fare similar to how our grandmothers used to make them. That is why we engaged traditional Malay food consultants,” said Abdul Razak.

At the buffet is the “Hidangan 40 Penyamun”, which has dishes such as Daging Masak Dendeng, Ayam Masak Merah dengan Kacang Peas, Sambal Sotong Petai, Betis Kambing Masak Kurma and Lala Masak Pedas.

Patrons can also enjoy the offerings at a specialised noodle bar – Warung Mee Labu dan Labi — where wok-fried noodles are prepared on the spot. Alternatively, they can try the prawn mee, tom yam or chicken Thai noodles.
